I was asked about stitching Block 3-the plaid. I will be adding photos as I stitch this and I hope I can help. I started by counting 8 vertical threads and then doing a tent stitch skipping every other one. Full disclosure: I will be ripping this out! Why? I think it would be neater on the back and easier to stitch the next section if I stitch it diagonally. I will restitch and show photos of the front and back.
